We all do this. We want lunch or dinner and nothing's there. Empty refrigerator, lack of desire to create exciting "cuisine," so we start fishing for what we do have and come up with a concoction that may never appear again. Except for this one. The magic here was having everything on hand. And get this, most of it the ingredients came from a package or a can or a jar. All the wrong things, right? Not this time. They were no-salt-added and unsalted and that make this one a perfect quick burrito.

Makes 4 servings, 8 burritos




  • 1-can of Eden Organic No-Salt-Added Pinto Beans with liquid (52.5 mg)
  • large onion, diced (2.25 mg)
  • 2 level tablespoons of dark brown sugar (10.8 mg)
  • 1 teaspoon of Grandma's Chili Powder* (trace)
  • 2 tablespoons of Cannon's Jalapeno Sweet Hots** (trace)
  • 8 6-inch low sodium corn tortillas or your homemade flour tortillas (64.8 mg)
  • 8 tablespoons sour cream or light sour cream (50.9 mg)


  • In a small to medium saucepan, heat the beans, onions and brown sugar over medium heat. Stir frequently. Let it come to a low boil, then simmer for about 5 minutes, stirring. When liquid has boiled down some, turn heat off.

    Either heat the tortillas in your microwave or on a griddle.

    Spoon a tablespoon of sour cream onto the beans and roll up the tortilla.

    Enjoy it hot.
